How is it possible to apply the styles and formatting from one document (ie an existing template) OVER those I have in a new document?

Thanks for your question and welcome to the forum.
The following assumes that the template file and the other document have matching style names (e.g. you want to map the formatting for Heading 1 in the other document to the formatting for Heading 1 in the template).
You could try starting a new document from your template; then go to the Insert ribbon, click the small dropdown arrow next to Object and select Text from File.
Navigate to and select the document which contains the styles you want to change, select it and click Insert.
The document content should import and the styles should change, providing they have identical names.
