My plan shows months May, June, July etc etc. Is it possible to hide some of these months columns that have now passed?

Highlight the columns/rows you wish to hide then right click. Select 'Hide' on the menu that appears.

Hiding columns works slightly differently in Project. When you choose to hide a column it is in fact removed from the table (although the data remains in the database).
As an alternative perhaps you might like to use the filters instead. From the Project menu choose Filtered for then choose More filters. The "Date Range" filter might give you the results you are looking for or perhaps either "In progress tasks" or "Incomplete tasks".
Once applied Project will use the criteria in the filter to only show those tasks that meet your requirements.
