Can I make Project warn me of upcoming tasks or deadlines? Can I make it behave like Outlook, link to Outlook or do I have to copy the key dates from my Gantt chart into my outlook?

Hi Paddy
If you double click on your task - and go to the advanced tab - you can add a deadline. When your task crosses the deadline on your chart you will see a red diamond in the indicators column to alert you the deadline had been passed.
Outlook doesn't easily integrate with Project. Although you can import your Outlook tasks (Tools > Import Outlook tasks...) this is a one way process and won't syncronise between the applications.
Project server (through Project Web Access) however does allow for greater integration between Project and Outlook.
