If you left out a junction table but kept two other tables, could you still get results?

Hi Stephen,
Thank you for your question and welcome to the forum.
If you remove a junction table, the two tables will not be linked. When you run a query based on the two tables, as there are no links, Access will return all the records of the database.
I hope this answers your question.
