How do I set my project working week up to be:
8pm - 11pm Mon-Thurs
1pm - 6pm Sat-Sun

First work out the total working hours that will take place each week.
In a new blank project go to Tools > Options > Calendar
Put in your default start and finish times e.g. (8am and 11pm) and set the number of hours per day and week to match your new times. OK your changes and go to Tools > Change working times. At the bottom of the dialog box click on Work Weeks. Highlight the only entry and click on details. Here you can mark Fridays as non working and set Saturday and Sunday to follow non default working hours. Again OK your changes.
Close the currently open blank project plan. You don't need to save changes. Create a new blank project and your plan should have the correct calendar hours. Be aware though that on week days your working day is 3 hours but on the weekend each day is 6 hours long. Project only lets you set one value for how many hours work is in a day (tools > options > calendar) So if you set it to 3 hours per day and create several one day tasks you will find you can do one task per day in the week and two tasks per day at the weekend.
