I am reviewing a project plan that someone else has sent me and I want to view all the columns and not just those sent in the view. How do I know what other columns may have data in them without going through all the additional column options one by one and adding these.

You could export the project to Excel. Create a data map to export all Project fields. All data will be exported to Excel and you can see it there.
Remember however that Excel 2003 and earlier have only 256 columns, so you will have to export in two hits as the data is exported to columns not rows.
Excel 2007 has unlimited columns so it works in one go.
