what is the difference between numbers and currency?

As for your the answer to this question there is a difference between the 2, and it will depend on why you are using currencies or just numbers
when you use just number formats then you can have positive and negative number or any type of number.
If you are dealing with other countries for example europe or the states then the numbers will need to have a currency associated with them so the only reason you need a specific symbol for that countries currency
