I have looked at a few options in word and help files and the only solution it seems, is to type a macro into the visual basic window and it will increment the invoice number every time you open the document.

If you go to google and type in somrthing like 'can i make the invoice number increment automatically in a word template', you will get a few different links to answers you may want to read through.
